    Primary Responsibility

    Responsible for maintaining the overall management of the The Pearl Hotel's Bake Shop. Other responsibilities include providing direction and management of all pastry culinary development operations, including market competitiveness, pricing, compensation, and corporate strategy.

    Responsibilities

    • Meet designated Food & Labor costs for each department
    • Responsible for distribution of all menus & work orders to the proper personnel for successful completion of all tasks. This includes checking the daily activity logs and master contracts to ensure most current version is used.
    • Ensure that proper labeling and packing techniques are used for safety and stability of products and easy identification at events.
    • Serve as a key member of the executive team that sets the company’s strategic direction.
    • Testing and evaluation of new pastry and dessert recipes with input from Executive Team.
    • Preparing a budget for the Pastry department of the kitchen in conjunction with the management and the other chefs.
    • Supervising the various apprentice and chefs in training in the Pastry & Specialty Cake departments.
    • Work in tandem with Corporate Executive Chef and Executive Chef to maintain a safe and clean kitchen, including the bakery
    • Supervision and management of all Pastry staff
    • Produce all needed pastry goods and specialty items for Sales team
    • Ensure quality and consistency with all pastry production
    • Communicate with Corporate Executive Chef and the Director of Club Operations to accomplish production requirements.
    • Work directly with Purchasing Agent to correctly charge for all baked items and to assure adequacy of bakery's inventory is maintained.
    • Call in appropriate orders if necessary and turn in some ordering to Purchaser

    Qualifications

    Qualifications

    • Degree in Baking and Pastry Arts is required
    • Must have at least five (5) years’ experience in the field
    • Ability to read, analyze, and interpret general business contracts and write reports, business correspondence, and procedure manuals.
    • Ability to effectively present information and respond to questions from managers and/or staff.
    • Must maintain clear and concise documentation and positive approach to conflict resolution.
    • Excellent interpersonal, communications, public speaking, and presentation skills with the ability to coach and develop staff.
    • Ability to plan and manage at both the strategic and operational levels.
    • Ability to work collaboratively with colleagues and staff to create results driven, team oriented environment.

    Requirements:

    • Must possess thorough knowledge of Microsoft Windows and Office (Word, Excel, Outlook).
